WHere is an easy version of a beverage featured on the seasonal menu. This is a party-sized pre-mixed which is loaded with tastes associated with holiday season, rendering it perfect for a holiday party. Reserve the remaining cordial to use in breakfast cocktails, desserts, or to mix additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Put all the components inside a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the stove allowing it to reach room temperature completely. Pour into an sterilised bottle, seal keeping it chilled, it can be stored for up to a month.
For the Premix: Pour the specified liquid ingredients into a large bottle, let it rest for an hour, then pass it through best through cheesecloth, making it perfectly clear.
To serve: Pour 85ml of your batch mix to a mixing glass containing ice, and agitate carefully for a minute to cool it down. Filter into a chilled martini glass or equivalent, garnish with a few cranberries adding the final touch using a quick spritz of the essential oil over the drink.
